Grays is pretty good, but the best book for anatomy hands down is Netters. Both are more dedicated to anatomy than physiology though. Links below for each.

Netter's is the go-to gold standard in med schools these days. The pictures are beautiful. It covers pretty much everything.

Netters has some pretty funny genitalia "drawings" - wonder who the subjects were and if Ol' Netter had to liquor them up first, or if they were cadavers!

The fifth edition of Clinically Oriented Anatomy (ISBN-13: 978-0-7817-3639-8) is excellent. Who needs more? It came with two CDs of digital imaging I've never look at. It has way more information than I'll ever need.

However I keep a F.A. Davis Company Ortho Notes handy for when 50 cent words get thrown out. I keep a copy in my boot bench. It has a great down and dirty foot anatomy/muscle/biomechanics section I can refer to.

the full clinically oriented anatomy is way overkill nearly all the time

essential clinical anatomy (also by moore and dally) is probably a better text for learning A&P since it'll leave out a lot of the ridiculously esoteric bits that don't matter much (it's also laid out in a more efficient design for actually learning rather than being a reference)

and netter or grays atlases are both good depending on which art style you like more
