    Chicken Wing Recipes

    A friend of mine is throwing a party this weekend and I want to make home made chicken wings. I found what I think is a decent recipe:

    INGREDIENTS

    * oil for deep frying
    * 1/4 cup butter
    * 1/4 cup hot sauce
    * 1 dash ground black pepper
    * 1 dash garlic powder
    * 1/2 cup all-purpose flour
    * 1/4 teaspoon paprika
    * 1/4 teaspoon cayenne pepper
    * 1/4 teaspoon salt
    * 10 chicken wings

    DIRECTIONS

    1. Heat oil in a deep fryer to 375 degrees F (190 degrees C). The oil should be just enough to cover wings entirely, an inch or so deep. Combine the butter, hot sauce, pepper and garlic powder in a small saucepan over low heat. Stir together and heat until butter is melted and mixture is well blended. Remove from heat and reserve for serving.
    2. In a small bowl mix together the flour, paprika, cayenne pepper and salt. Place chicken wings in a large nonporous glass dish or bowl and sprinkle flour mixture over them until they are evenly coated. Cover dish or bowl and refrigerate for 60 to 90 minutes.
    3. Fry coated wings in hot oil for 10 to 15 minutes, or until parts of wings begin to turn brown. Remove from heat, place wings in serving bowl, add hot sauce mixture and stir together. Serve.


    Anyone have anything better than that?

    Also, I can't seem to find a store bought blue cheese that is as good as what you can get at a good wing place (J. Timothy's, Archie Moore's, etc) anyone have any insight into this, whether its making it or buying it I'm open to ideas. Clearly a TR to follow on this party.

    id say skip the breading and just fry them
    less is more on chicken wings imo

    butter & franks is all you really need, but for more of a kick put the 1/4 teaspoon of cayenne in there. (or more )

    My favorite wing dip is Ranch Dressing w/Bleu Cheese crumbles.

    By "Hot Sauce" you better mean Franks.

    just bake them on a rack so it gets the wings off the pan to get crispy skin all over. Frying wings is NOT as good as baking no matter what anyone says. Just bake them plain and then toss them in whatever proportion mixture of franks and butter you feel like. You cant go wrong.

    Frank's is the sauce. It's "Durkee" brand these days, I think, but still should say somewhere on the label that it is Frank's.

    ive never had good baked wings
    they always come out slimy or fatty or something

    how long at what temp?

    and no matter what you or anyone says, baking or frying sucks in comparison to cooking them over an open fire till the skin gets crisp. you dont even need sauce theyre so awesome.

    Bottom of that recipe has this comment from someone:

    I followed the instructions exact except I baked on a rack set over a jelly roll pan at 350 for 45 minutes. Then I turned the oven to 375 and sprayed the wings with Pam and let them bake 5 more minutes so they got crispy. Excellent and you'll never miss the deep fried taste!

    But I still need to know about good blue cheese.

    1 Bottle Frank's
    1/2 stick butter
    1-2 Tbsp tomato paste
    1-2 Tbsp brown sugar
    1-2 Tbsp crushed red pepper flakes
    2-4 finely chopped habanero peppers, w/ seeds. If you can't find Habaneros or Scotch Bonnet peppers, get some good Habanero hot sauce like Melinda's and add to desired heat. A dab or two of Dave's is also a nice addition if you can't reach the desired level of pain from the Habaneros.

    Lightly simmer sauce until it reaches desired thickness and the Habanero flesh almost dissolved, about 15-20 minutes

    I don't really like adding powdered seasonings like garlic, paprika and cayenne as they tend make the sauce kinda pasty, for lack of a better term. Also, they tend to burn if you grill the wings sauced. For this reason, I'd cut back or cut out the brown sugar if you're grilling sauced for any length of time.

    Breading is a personal preference kind of thing. Try it both ways and see which you like better. I like a thin coating of a really simply flour and corn starch breading because it adds some crispiness and gives the hot sauce something to cling to.

    Finally, I agree that grilled wings are damn good, but I don't agree that grilling is a direct substitute. The two styles are completely different IME, and grilling takes more work to get it right. Whichever tastes better clearly comes down to personal preference, but I prefer fried.

    Well Id have to agree with you on that. I have a rotisserie on my charcoal grill at home that makes awesome wings(and ribs). I had kind of assumed indoor prep on this one though.

    Usually you will get slimy baked wings if someone bakes them on a baking sheet and never bother to turn them over during cooking(even if you do turn them over, the side that was the top and was crisp then cooks the second half in juice and gets slimy again). I like doing it on a metal drying rack(with a drip pan below) or something similar since all the fat drains off while cooking and you only have to turn them over if you feel like it(it helps but not that much). If you have a drying rack with the proper sized square grids in it its actually best to cook the wings upright(I only cook drumettes because I like them better, itd be harder to stand up the two boned ones) and not touch them during the hour or so of baking. Ill usually cook mine at 375 for 1-1.5 hrs and if they're not upright Ill flip at 30-45 min, then let cool for a few and toss them in a bunch of sauce. Works for me.

    I actually agree with you that in a head-to-head, hot sauceless battle, the grilled are unfuckwithable. However, when hot sauce comes out, my redneck brain takes over and tells me that grilling is wrong and they must be fried. Also, I'm lazy and it's way quicker.

    Oh, and whatever you do, don't put the wings in the hot oil and then decide you have time for a quick shower, you'll burn down the house. Trust me on this one.

    Actually it was only the kitchen that burned, but that was enough.

    I skip the sugar in my sauce and give it a bit more "depth" with some cumin, chili powder, a splash of worchestershire and a small dash of liquid smoke.

    I will fer sure have to try the grill method with the wings, too. Thanks for that one CM .

    Why does everybody talk about hot wings? Baked chicken wings marinated in a mixture of soy sauce, garlic, and ginger and topped with sesame seeds are my fav.

    nope, sorry, I just had seen that and saw a post about good blue cheese. I am sure it can be turned into dressing, but that cheese is too good to be dressing. Marie's should work fine.

    If you want to get crazy, throw some maple syrup in. It's a nice balance to the hotness, and it tastes fucking delicious.

    I just saw Alton Brown put maple syrup on his chicken(covered in hot sauce) and waffles. Sounds delicious, I must try it.
